Grandma's Relish

(This post is dedicated to Grandma and Grandpa Sanner, of course!)

My mom has a VERY large garden which has been producing A LOT of veggies.  She brought over so many cucumbers that I had to ask myself, "What are we even going to do with these while they're still good??"  Chris came up with a brilliant idea: Grandma's relish!  Chris' grandma has a relish recipe that is to die for.  Before trying this relish, I was not a fan of anything but ketchup on my hot dogs.  Now, I smuggle Grandma's Relish into every sports arena I go to.  For real.  No lie.  This stuff is amazing and if you haven't tried it, you're missing out big time.  We realized that the last time we made relish was with Chris' grandparents back in 2009.  We still had a few jars left, but thought it was about time to make some more.  We pretty much took over Chris' parents house for the day and ended up making four batches of deliciousness.  Four batches equaled 24 pints, plus two quarts.  I think that will last us at least through the summer.  ;)

Chris LOVED making the relish and pretty much took over the grinding:

Caleb, who has started to really appreciate our family baking/cooking days (like when we make lefse once a year or bake Christmas cookies with Uncle Kent), was very interested in the process but didn't actually want to touch anything...

Mr. Construction Worker was no help at all....  (hehe)

Doesn't this look amazing?!

So, the moral of the story is, we have a lot of relish and we're willing to share.  I think it's time for a big cookout at our house so Chris can use his fancy grill AND we can all eat relish!  :)
